Recipe for Healthy Cookies with Honey and pictacio
280 gr. flour
6 gr. baking soda
1 gr. vanilla extract
120 gr. brown sugar
200 gr. mayonnaise
40 gr. honey
40 gr. pistachio, coarsely chopped
10 gr. ginger, grated
6 gr. lemon, zest
  • In a bowl, mix the flour, baking soda and vanilla.
  • Put the sugar, the honey and the mayonnaise in the bowl of the mixer and beat with the whisk until fluffy.
  • Add the flour mixture to the mixer bucket and mix until smooth.
  • Add the pistachio, the ginger and the lemon zest and mix all the ingredients together.
  • Lay a baking tray with baking paper or silicone.
  • Cut with a spoon pieces of dough of 25 gr. about and place them in the pan making sure they have 5 cm, distance between them on each side, as they will spread during baking.
Bake in a preheated oven at 180 ° C or 356 ° F until they get a nice color
